The use of peach in a Bellini gives it a unique taste. Be sure to use a ripe, fresh peach.   This drink is a fantastic choice for Christmas day.

  • Half of a skinned, fresh peach
  • Two and a half teaspoons (12.5 ml) of crème de pêche
  • Champagne
  • Peach ball
  • Peach bitters (optional)

Instructions

Use a blender to purée the skinned, fresh peach, then pour the juice into a champagne flute.  Add the crème de pêche. If you are using peach bitters, add a dash of those as well. Top with champagne, while stirring constantly.  Place the peach ball at the bottom of the glass, to use as a garnish. Serve.
