A champagne julep is a great choice for a relaxing Christmas afternoon. If your champagne is starting to go flat, the sugar in the champagne julep will get it fizzing again.
Instructions Mix the sugar and the water, and then boil the mixture, stirring continuously. Let the mixture cool. Poor it in a bottle, and then place it in the refrigerator to cool even more. When the mixture, which should now have formed a sugary syrup, has cooled sufficiently, pour 3 teaspoons (15 ml) of the syrup and a dash of limejuice into a highball glass that is filled with crushed ice. Add five of the mint sprigs. Top up with champagne, and then garnish with the last mint spring. |
