Champagne Julep

A champagne julep is a great choice for a relaxing Christmas afternoon. If your champagne is starting to go flat, the sugar in the champagne julep will get it fizzing again.

  • Champagne
  • 18 ounces (500 grams) of sugar
  • 8 1/2 fluid ounces (250 ml) of water
  • Six mint sprigs
  • Lime juice

Instructions

Mix the sugar and the water, and then boil the mixture, stirring continuously.   Let the mixture cool. Poor it in a bottle, and then place it in the refrigerator to cool even more.

When the mixture, which should now have formed a sugary syrup, has cooled sufficiently, pour 3 teaspoons (15 ml) of the syrup and a dash of limejuice into a highball glass that is filled with crushed ice.  Add five of the mint sprigs.  Top up with champagne, and then garnish with the last mint spring.
