Ginger beer is a delicious non-alcoholic drink as well as a great cure for upset stomachs, including those caused by indulging in too many Christmas treats.
Instructions Peel the limes and save the zests. Squeeze the juice from the limes. Place the ginger, brown sugar, lime juice, lime zests and cloves into a large French press (cafetière) or into a large jug that is heatproof. Pour one quart (one liter) of boiling water over the mixture until all the sugar is dissolved. Allow the mixture to cool. Plunge it or strain it, depending on whether you have used a French press or a jug. Chill the mixture. Pour into glasses, half-filling the glasses with the mixture and then topping up the drinks with club soda or sparkling mineral water. |
