Irish Coffee

An Irish coffee is a warm, relaxing drink that you can serve at the end of a delicious Christmas meal.

  • Two and a half tablespoons (35 ml) of Irish whiskey
  • Twelve ounces (330 grams) of sugar)
  • Five and half fluid ounces (170 ml) of water
  • One cup (8 fl oz, 250ml) of double cream
  • Hot double espresso
  • Three coffee beans

Instructions

Mix the sugar and water.  Boil the mixture, and then allow it to cool until it forms a syrup. Pour the syrup into a bottle. Refrigerate the bottle so that it can cool some more.

Pour the whiskey with two teaspoons (10 ml) of the syrup in a glass that is heatproof and mix.

Add as much espresso as you want.

Spread a layer of double cream over the top.

Add the coffee beans as a garnish.
