Mulled wines were once known as Ypocras or Hipocris, in honor of Hippocrates, the ancient Greek physician, because they were thought to be healthy. Here is a 17th century recipe for Ypocras (mulled wine), using red wine. It is from the book The Accomplisht Cook, which was written by Robert May in 1660.
Directions Pour ingredients into a large pot and heat slowly. Serve warm. This mulled wine may also be served cool after settling for a few days. |
