Mulled wines were once known as  Ypocras or Hipocris, in honor of Hippocrates, the ancient Greek physician, because they were thought to be healthy.

Here is a 17th century recipe for Ypocras (mulled wine), using red wine.  It is from the book The Accomplisht Cook, which was written by Robert May in 1660.

  • One gallon of wine
  • Three oz. cinnamon
  • Two oz. sliced ginger
  • One quarter oz. cloves
  • One oz. mace
  • Twenty peppercorns
  • One oz. nutmeg
  • Three pounds sugar
  • Two quarts cream

Directions

Pour ingredients into a large pot and heat slowly. Serve warm.

This mulled wine may also be served cool after settling for a few days.
